Day 1




Day 1

I decided to embark on this 21 Day journey again. I completed this program in the beginning of 2013 and it really helped me see the relationship I had with food. It helped me see what fueled my body and what didn't. I was amazed at how much energy I had. I felt like my body had been reset, brand new. It helped me develop healthier eating habits long after I completed the program.  

I was up all night with my youngest child. He was not feeling well and it worried me. So of course I was up tending to my baby! He is home from school today and I hear him singing in the back ground. He always seems to lift my spirits and knows how to please. He told me that he wanted to do the 21 Day Reset with me and was upset when I told him it's not for kids. He tells me he only wants to eat healthy food! I am doing my part in teaching my boys about healthy living and it is paying off. I want them to be happy with their healthy choices and teaching them the "why" on healthy living is important to me.

The program calls for Mineralized distilled water and a lot of it! I chugged my 25 ounces and took 2 Optimize capsules and now I wait for 30 minutes to eat my watermelon! I am not one for swallowing pills but I'll do it for 21 days. I am not following all the outlined meals because I am vegan and leaning more towards raw vegan. I have been transitioning to this way of eating the past 1 1/2 weeks and it's been interesting. I am feeling SO much better.

In my research to Optimal Heath I have been learning that food combining is pretty important. That if you eat certain foods together that you shouldn't, it's hard for your body to digest, hence so called stomach issues. And you are definitely NOT absorbing all the nutrients either. It's funny, these things are not taught growing up and are VERY important to know.


Brown Miso Soup w/green onion

Lunch was pretty good although I like the white miso paste better to make my miso soup. My Microgreen salad was great and my son had his own bowl full too! I made ours with baby spinach, red pepper, cherry tomatoes, avocado and the ginger-seseame-miso dressing.  I didn't add the pumpkin seeds because they are tough to digest.

I took the alkalinize(powder that is the color of grass!!) by shaking it in a small container with about 1 ounce of water and gulping it. I don't mind the flavor although the very first time I threw it back up! Click here for that clip! YES I videoed it! lol I had heard it was awful and I worked myself up under that pretense and didn't like it before I tried it. I actually DO like it now. It goes to show you that you need to keep an open mind no matter what people say!  

I am feeling pretty good so far today. A little hungry but nothing to worry about. I got this! 

Grilled Salmon w/asparagus and baby potatoes 
Dinner tasted very good although I overcooked the Salmon a bit. WHOOPS! It was plenty of food for sure.

It's about 9p.m. and I am feeling a little tired. The program calls for a lot of rest so I am good with that! I'm all about taking it easy these days :)
Overall, today was a success and I am determined to make tomorrow successful too!
